Green Soup...The recipe!

For those of you that want to share in the greenness here goes:

Poogey's Green Soup - Serves 4 (enough to take to work nearly all week!!!)

Ingredients:
low fat cooking spray
450g (1lb) potatoes, peeled and sliced
1 large onion, sliced
1.2 litres (2 pints) vegetable stock (using stock cubes)
nutmeg
200g (7oz) fresh spinach
Salt and Pepper

Get Cooking!:

Heat a large non-stick saucepan and spray with cooking spray, stir-fry potatoes and onion for 1 min. Reduce heat to lowest setting and add S & P. Cover the pan with a piece of baking paper tucked down into the sides and then put the lid on. Leave to sweat for about 25 mins, stirring every so often so not to stick.

Add the stock, a pinch or two of nutmeg and the spinach and stir together. Bring to the boil then blend in a food processor. Check seasoning and serve.

Help...It's green! Really really green!

Have just been creative and made some potato and spinach soup for my lunch over the next couple of days... Only it's turned out bright green.

God am I gonna be the laughing stock of the office... oh, the stigma of it all.

Let's celebrate our three legged friends

For those of you that don't know, my little dog Pixie was hit by a car last weekend. She is lucky to be alive but unfortunately lost one of her back legs in the accident. This happened a week ago and already she is doing really well and was going out for 'walkies' two days after it happened.

The vet said that the amputation will not affect her quality of life in the slightest and that she will be chasing squirrels with as much zest and energy that she did before the accident.

The only thing that I can see being a problem is other people and their attitude towards her. On the whole she has experienced a great deal of 'Awww' and 'Bless'. However there is the minority that believes that it would have been kinder to have her 'put down'. My answer to you people is that if you lost an arm, should we put you down?????

So let us celebrate our three legged friends...... Long may they reign.
